I made four changes to the matcha preparation I did tonight: I sifted the matcha, I brewed at a slightly higher temperature, I whisked with a little water first, and I used less water overall. The froth and texture were *superb*.

The matcha itself, however, is basically not worth drinking. I did OK with the first few out of this bag, but it's low-grade. Going to have to spring for some better stuff. This stuff is all gonna go into matcha shortbread.
